An exceptional quality wine. The colour is a very pure bright yellow, with golden highlights. A froth of light bubbles forming a discreet ring in the glass. Rich and varied aromas, full of delicacy and subtlety. As wine opens up, pronounced hazelnut notes are evident. On the palate the wine is full-bodied, delicately sweet and well rounded, in full harmony with the complex aromas. Definite fresh fruit notes. The wine develops on a very silky structure. A fresh and assertive finish, boding well for this exquisite wine. Blend: 43 % Pinot Noir, 42 % Pinot Meunier, 15 % Chardonnay. Cuvée des Moines does not undergo malolactic fermentation.

The colour is a soft pink with orange and salmon highlights. Fine froth forming a creamy ring in the glass. The nose is intense and clean with notes of slightly candied small red fruit, especially wild strawberry. It carries suggestions of almond and red currant jelly. Good weight on the palate. Attack is slightly acid, then red fruit are back to the fore with black and red currants. Mouth is fleshy, fresh and tender. Definitely balanced with very silky texture. The finish is lively, not aggressive, with persistent length. Blend: 47 % Pinot Noir, 40 % Pinot Meunier, 13 % Chardonnay. Cuvee des Moines Rosé Brut does not undergo malolactic fermentation.

A romantic Champagne… First loved by women, its balance and its delicacy have made it a revered wine appreciated by everyone. The production secrets and the vinification method of this cuvee go back to the origins of the House of Billecart-Salmon and have been handed down for seven generations. The Brut Rose is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as white wine with a small percentage of Pinot Noir vinified as wine. Its pale pink colour is adorned with warm glints of gold, and its delicate, slowly rising bubbles gives it a persistent mousse. This Cuvee unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red fruits. A light elegant style, followed by a fresh finish. This Rose is an ideal partner to an apperitif, but can also accompany a dish of wild salmon or sushi. For dessert, it will add a sublime touch to red fruit flavours.

The aromas are cheifly characterised by pear and blackberry with hints of cut hay. Light and refined with a touch of citrus on the finish. Billecart-Salmon is one of the few remaining Champagne houses to be owned by the original family and was established in 1818 by Nicolas-Francois Billecart. Most of Billecart-Salmon's fruit comes from a small vineyard holding, though this is supplemented with grapes bought in from the Marne Valley and the Montagne de Reims. Meticulous production techniques, from the use of their own cultured yeast to its long, slow, cool fermentation, ensure that the family has 100% control of production.

Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this – its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine 'non vintage'. The suggestion of naming it 'Special Cuvée' was immediately approved by Monsieur Bollinger. A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged. Charles Heidsieck Brut Reserve cellared in 2001. 'An uncommon voyage of the senses'. Colour: tint is golden, straw-yellow and deep. Nose: the nose is delicate but fresh. In the beginning floral notes, with violet, iris, lilac and hints of citrus peel. Followed by fruity notes of fresh fig, greengage plums and stewed rhubarb. The finish becomes warm and elegant around lush hints of honey, creamy pastry and biscuit. Palate: The attack is strong. The first expressions are citrus fruit and apricot or white peach. This is followed by warmer, richer hints of cereals, dried fruits and nougat. Grape: Pinot Noir, Chardonnay, Pinot Meunier.

Colour: The tint is a pearly pink, the effervescence fine and joyous. Nose: A discreet first impression of peony, wild rose and forest undergrowth, followed by fruity hints of redcurrant, candied cherry and pomegranate with softer hints of strawberry jam giving way to spicier touches of cinnamon. Palate: An ample and velvety wine with a touch of romanticism. The softness of redcurrants, morello cherries and pomegranate joins with more delicate notes of violet and liquorice. A fine balance evolving toward brown sugar.

Ltd Availability. Conditions suitable for making Dom Perignon white vintage do not guarantee the production of a Rose. The pale salmon colour is achieved by the addition of still red pinot noir wine to a blend of still wines made from pinot noir and chardonnay. The pinot noir wine must be of exceptional quality. The inclusion of chardonnay is important to the character of Dom Perignon Rose, a vital ingredient in producing a wine of perfect balance. The two grapes together offer harmony and complexity which is less likely to be achieved in Champagne by either grape on its own. Dom Perignon Roses remain a rare commodity due to the small quantities available from each vintage year.
